The subject is obviously not easy to answer but let me try.
The World Health Organization (WHO) defined health as [a state of complete physical, mental and social well-being], not merely the absence of disease. Either way, it's only a general concept with any objective way to quantify your health.
In reality, there are a lot of situations eroding our health without us knowing.
There is a ted talk given by Dr. William Li: Can we eat to starve cancer?
https://www.youtube.com/watch?v=B9bDZ5-zPtY
I strongly suggest you to listen to Dr Li. If you don't have time, start from 4:30 in his speech, he actually tells us that microscopic cancer is very common in our body, and the percentage grows with age even when we are still considered as healthy. Why are these cancer cells not growing nor spreading? Or when and what makes them grow and become a clinical diagnosis?
In modern term, it's our ability to keep the homeostasis. In another word, the self-healing ability to keep ourselves healthy. Today we know it's our defensive system. Immune is part of it. In traditional Chinese medicine, its --- balance.
What is the key factors that will keep us healthy and invincible to illness?

In traditional Chinese medicine, the status of "qi" in a person is the easiest way to monitor her/his health, and this can also guide me to prescribe the right acupuncture and herbal remedy for this person. In Chinese we describe the best way to die as, "Ends peacefully without any suffering", which is also part of the concept of "healthy" and the normal consequence of a healthy life. Hopefully everyone knows how to preserve one's health from our lifestyle before any warning sign is found. It's not difficult and it's never too late.
